Cream of Summer Squash Soup - recipe 50 - for discussion September 17th

CREAM OF SUMMER SQUASH SOUP
A new EASY and delicious favorite via my mom. Makes 4 servings. I double the recipe.

INGREDIENTS:
1 pound of zucchini or yellow squash (or a mixture)

2 tablespoons butter
1 tablespoon chopped shallots or Vidalia onions
2 tablespoons water
1/2 teaspoon curry powder
1 can (13 oz.) chicken broth or parve stock
salt and white pepper to taste


DIRECTIONS:
Thinly slice zucchini or squash.

Heat butter in a large saucepan.
Add squash, shallots (or onions) and water.
Cover and simmer gently for 10 minutes. Do not let squash brown.
Cool. transfer mixture to blender. Add remaining ingredients.
Cover and blend until smooth.
Return to saucepan and heat slowly to serving temperature.
