I picked this recipe since my husband and I like Thai food and also it's been pretty hot around here where we live, so I picked this recipe since it sounded appetizing to summer time. I am not Thai, so I don't know how authentic this recipe is going to be. I hope many of you will have a chance to cook this and enjoy it.
INGREDIENTS:
1 pound dried rice noodles
2 tablespoons vegetable oil
4 eggs, beaten
2 tablespoons peanut oil
1 1/2 cups peanut butter
1/3 cup water
1/3 cup soy sauce
1 cup milk
1 1/4 cups brown sugar
1/3 cup lemon juice
2 tablespoons garlic powder
1 tablespoon paprika
cayenne pepper to taste
1 pound mung bean sprouts
1 cup shredded carrots
1/4 cup chopped green onions
1/2 cup chopped, unsalted dry-roasted peanuts
1 lime, cut into wedges
DIRECTIONS:
1. Submerge the rice noodles in a large bowl of hot water for about an hour.
2. Pour 1/2 tablespoon of oil into a large skillet, and add eggs. Scramble into medium-sized pieces, and transfer to plate. Set aside.
3. In a saucepan, mix together peanut oil, peanut butter, water, soy sauce, milk, brown sugar, and lemon juice. Season with garlic powder and paprika. Heat until sauce is smooth. Season liberally with cayenne pepper.
4. Drain noodles; noodles should be very flexible, but still relatively firm. Heat remaining 1 1/2 tablespoons vegetable oil in a large saucepan or wok. Cook noodles in oil, stirring constantly, until they are tender, about 2 minutes. Stir in peanut sauce, sprouts, carrots, scallions, ground peanuts, and the scrambled eggs. Continue to cook over low heat until vegetables are crisp-tender, about 5 minutes. Serve immediately, garnished with lime wedges.

First of all, I would like to apologize to all of you who cooked this recipe! I thought that it was terrible! It was not at all authentic in my opinion. It calls for too much peanut butrer, but not only that the Pad Thai that I Have had don't use peanut butter. I should've known better. If any of you like Thai food, I will keep looking for a better recipe for Pad Thai and if I find something that works, I will send it to you!
I looked at a different recipe and saw it uses fish sauce which I thought that it wouldn't be kosher. Maybe you can replace fish sauce with soy sauce. Anyhow I'll keep looking for a better recipe for Pad Thai.
The recipe that I submitted called a lot of peanut butter, so I reduced the amount when I cooked. I put a little more lemon juice than the recipe called for. I added fried tofu since I've had Pad Thai with fried Tofu before. I think that the recipe tastes better with fried tofu.

I did cook this recipe as my husband and I LOVE Thai food (pad thai being his favorite dish). We had made a Pad Thai dish a few months ago that we loved. I was therefore very weary after looking at this recipe as I thought the peanut butter and lack of fish sauce was weird. But, I tried it anyway. And. . . I hate to be harsh. . .
BUT IT WAS TERRIBLE!!! I took a few bites, offered a couple spoonfuls to my hubbie and friend and then threw it away. The flavors did not mix well together, the noodles were gummy (that's obviously my fault) and just in general, it was not a good recipe.
Of course, glad to try something new so I don't regret making it but, overall, a definite "never again"!

I was also surprised about the amount of peanut butter; there's one Mollie Katzen recipe that I've made a few times before and I didn't remember it having peanut butter. (But I'm out of town now, so I couldn't check.) I was short on a few ingredients (hard to get mung bean sprouts in Cape Cod, apparently) so I figured that we were underimpressed because it was missing a few things.
Oh well, I'm glad I wasn't the only one. What I did like about this was that it seemed like a lot less work than the Mollie Katzen, which like all of her recipes, requires you to use every pot, pan and utensil in your kitchen to make a dish. And I thought the idea of soaking the noodles in hot water was brilliant - much easier than cooking them!
