INGREDIENTS:
1 package (18-ounces) refrigerated sugar cookie dough, softened
3/4 teaspoon lemon extract
1/2 cup seedless raspberry jam
1/4 cup chopped pecans
DIRECTIONS:
Preheat oven to 350 degrees F.
Line an 8-inch square glass baking dish with enough foil so there is an overhang on 2 sides. Mix cookie dough with lemon extract, kneading to combine. With damp fingers, press 2/3 of dough into bottom of prepared baking dish. Spread jam over dough. Crumble remaining dough evenly over top of jam. Scatter pecans over top. Bake for 30 to 35 minutes or until browned around edges and cooked through in center. Let cool in pan. Lift edges of foil to remove bars. Cut into 2-inch squares or diagonally into pennant shapes.
Sugar Cookie Recipe in case you don't want to buy dough or you can use your own favorite recipe:
1 1/2 cups sugar
2/3 cup shortening or butter
2 eggs
2 tablespoons milk
1 teaspoon vanilla extract
3 1/4 cups flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
Early in the day or the day before:
In a large bowl cream the shortening and the sugar. Add the eggs, extract, and milk. In a medium bowl mix the dry ingredients with a wire whisk. Add the dry ingredients to the large bowl. Mix with mixer until well combined. With hands, shape dough into a ball. Wrap with plastic wrap and refrigerate for 2 to 3 hours.

My cookies are still cooling. Will add my comments later. The one thing I can say now is that my crumble on top didn't look like a crumble. It just sort of created a layer of cookie on top of the jam with a bit of a bumpy texture. I can't even see the jam because it is totally baked over by the crumble. It looks really pretty though.
I used blackberry jam instead of raspberry. It worked great. These went over extremely well in our house, though I had to bake them for 30-40 minutes longer than suggested in order to get them cooked through in the center. I like them but found them to be REALLY sweet. That didn't bother anyone else who ate them, though.
