INGREDIENTS:
1/2 c. margarine or butter, softened
1 c. firmly packed brown sugar
1/2 c. white sugar
3/4 c. peanut butter
2 eggs
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 1/2 c. oats (quick or old-fashioned)
big handful each of raisins, chocolate chips (and nuts if you want - I used toasted pecans)
DIRECTIONS:
Preheat oven to 350.
Beat together margarine and sugars until creamy.
Add peanut butter, eggs and vanilla; beat well.
In a separate bowl, combine flour, baking soda, cinnamon and salt. Add to above and mix well.
Stir in oats, raisins, chocolate chips, nuts. You may need to use your hands to integrate everything.
Press into an ungreased 9x13 metal pan; bake for 30 minutes.
Cool and cut into bars.

Laura & I made the recipe together but, because I love peanut butter and laura hates it, we only included peanut butter in one half of the batter.
We were able to bake the two different batters in one pan, though, without a problem. It was fun to compare the two variations. BOTH were great! This is definitely a great recipe.
I personally preferred the peanut butter option but felt that the raisins, chocolate chips and nuts added too many different flavors & textures. I would leave out the raisins next time.
However, without the peanut butter, the raisins, chocolate chips and nuts together were a great combination. One of our tasters said that she preferred the non-peanut butter option because you could better distinguish between (ie. enjoy) the different flavors.

Jon and I enjoyed these fresh out of the oven with some milk, while checking out Kinsey. Jon really loved them. He couldn't get out of bed soon enough this morning to have one for breakfast.
I liked them too, especially as the little clumps of chocolate and peanut butter were still melted. I can't help but wonder, though, if I would have liked these even more without cinnamon... Seemed that there was a little too much going on in there. We will keep these in our box of yummy treats! Thanks for a great recipe. Am I the only one who's amazed at the rationalization factor of oats? Feels like it should be a healthy bar, but you know it's not. Kind of like a chain-smoking hippie.
I used Smockers Natural Chunky peanut butter, President butter, Hershey's semi-sweet chocolate chips and Sun Maid Goldens & Cherry mix. Didn't go for nuts, because of the chunky texture of our peanut butter.

These were delicious! I followed the recipe and included mostly everything except the raisens and nuts, oh and I only had like 1/2 a cup of brown sugar so I just made do. They were sweet enough...
Dan was bummed because I was baking something he "couldn't eat". The man chooses not to eat peanut butter, so, by all means, he could have eaten them, he just chose not to. I chose to eat one at 10pm before going to sleep. They were so yummy. This recipe is a nice trade off for the good ole brownie or blondie recipes I make frequently. The chocochips added nice texture. I'm glad they're getting such a good response - I have to say, I am really happy with them as is, because I tried a few variations before I settled on this one. I did think about Craisins, so I may try them next time I make this. And I'm also going to try applesauce like Amy G. did. I starting using it in banana breads and those sorts of things, but I wasn't sure how it would work with these. It'll be interesting to compare the texture and consistency.
In general, I am becoming a big fan of bar cookies. I hate making cookies because they usually require a mixer and then it's so laborious to make batches and batches of cookies. Bars don't eliminate the mixer, but at least I can just stick one dish in the oven and not have to keep coming back every 10-15 minutes.
Oh, and about the healthy thing -
Amy G., yours are pretty healthy with the applesauce and egg beaters. I also used half whole wheat flour the last time I made these and you can't even taste the difference.
I agree with most everything that has been said. First of all, these were really yummy and a definite hit with the extended family.
Even though I didn't add the nuts, I still thought there were too many tastes going on. Next time I make them, I probably wouldn't add the raisins.
Very easy and quick to make. I would certainly try them again. Now that I'm writing about them, I wish I had some left! My mouth is watering!
