We baked the batter in two smaller loaf pans, which was nice because I was able wrapped one up in gift paper to give away the next day to our hosts at a Sunday brunch. (Should have photographed that because it looked great.)
Like the other 'Food Among Friends' chefs who've written in so far, I too was not too enamored with the flavor. In general, I thought the Squash bread was bland - both in look and flavor.
It wasn't bad but it wasn't yummy, like I had hoped it would be. Some people said that it was too sweet. Though it certainly used a lot of sugar, I didn't really taste it. I had also expect to taste a lot of the spices but they weren't very apparent.
I LOVE zucchini bread; so, I was surprised to not love this recipe. My mother has a great zucchini bread recipe that I will try to seek out and circulate.
I actually was surprised at the taste of the bread. It was very sweet and much like a dessert rather than a side dish. I didn't taste any nutmeg and the other people who tasted it said they wouldn't have known it was a squash bread unless I told them, so if I were to make it again I would add more spice and squash. Overall, though, it was sweet and easy to eat and I heard good reviews on this end. Certainly if I were needing to make a veg. type bread like this, it wouldn't be the first recipe I thought of, there are others that are better.
Good morning, everyone! I have decided to open the discussion on the summer squash bread. Honestly, I wasn't crazy about it. I thought it was too sweet or nutmeggy or something. I served it at a Father's Day b-b-q and it did not get rave reviews. I'm not even sure what to do to change it so that it would be better. What did everyone think?
