Island Jerk Burgers - Recipe 18 (part 1)

ISLAND JERK BURGERS

*1 package ground meat (calls for turkey), about 1-1/3 lb.
2 tsp chopped fresh thyme
2 tsp chopped fresh ginger
2 chopped green onions
1 tbsp chopped fresh cilantro
1/2 tsp allspice
1/4 tsp nutmeg

*combine all ingredients in a bowl.
*divide the meat into four parts.
*shape the meat into patties, leaving a slight
indentation in the center (this is supposed to help cook the meat more evenly and prevent it from rising in the center)
*grill

PAPAYA SALSA (to top the burgers)

1 small ripe papaya
1/4 small red onion
1/2 red bell pepper
cilantro
salt
1 jalapeno
sugar
*Chop the fruit and veggies, combine with sugar and salt in bowl. The amount and type of chiles is up to you.
