Curried Couscous with Broccoli and Feta - Recipe 11

CURRIED COUSCOUS WITH BROCCOLI AND FETA

Coucous Salad.
1 3/4 cup water
1 cup couscous
1 1/2 cup broccoli florets (STEAMED)
1/2 cup red onion
1/2 cup shredded carrots
1/2 cup raisins or dried cranberries
1/4 cup cashews
1 can garbanzo beans
3/4 cup feta

DRESSING
1 tablespoon white wine vinegar
1 1/2 tablespoon olive oil
1 tablespoon sugar
1 1/2 teaspoon curry
1 teaspoon bottled ginger, minced or ground
3/4 teaspoon salt

Make couscous with water. Be sure to steam the broccoli. Mix all salad
ingredients together, except feta. Mix all dressing ingredients together;
then mix into salad. Sprinkle the feta over the top of the salad. Serve at
room temperature.
